- 1 TBSP Cooking Oil – we use olive oil
- 1 pound vegan ground beef – lightlife is our favorite!
- 2 large sweet potatoes – diced
- 28 ounce can fire roasted tomatoes
- 8 ounce can tomato sauce
- 16 ounce can chickpeas
- 1 3/4 cup mushrooms – diced
- 1 medium sweet bell pepper – diced
- 1 medium onion – diced
- (1 1/2 cup of veggie broth or water for thinner chili – we don’t do this, we like our chili THICK lol)
- 1 TBSP Chili Powder
- 1 TSP Ground Cumin
- 1 TSP Garlic Powder
- 1/2 TSP Salt and Pepper
- 1/2 TSP Paprika
- Brown your vegan meat in skillet and place onto plate when done. In same skillet, sauce onion until fragrant (until you can smell them), should be around 2 minutes. Then place meat and onion into crockpot.
- Add your broth (if you choose), canned tomatoes, sweet potatoes, chickpeas, mushrooms, and mix it all together.
- And lastly, add your seasonings, tomato sauce, and bell peppers.
- Stir and cook on HIGH for 2-3 hours (checking and stirring every hour)
- We finish our bowls off with vegan cheddar cheese and vegan sour cream…
- SO GOOD!
